Summery Salad

Salad :

For Three People

1 Avocado (Sliced Thinly or cubed. Whatever makes your skirt fly up.)

6 cups of Lettuce (Iceberg, romaine, anything you like. Bit size pieces)

Mozzarella (Brick, ball, fresh, aged…whatever kind you like and however much you like. )

1 medium Red Onion (thinly sliced)

handful of Sprouts (I like broccoli sprouts but whatever you can find works)

1 cup Black Olives

6 slices of bacon, turkey or otherwise. Crumbled. Or 3 sliced Chicken breasts.


(I find this makes a lot of dressing so you would probably be fine if you cut the recipe in half if you didn’t want leftovers.)

3 Roma tomatoes
1 garlic clove
2 tbsp red wine vinegar
4 tbsp oil
1 tsp red pepper flakes
salt and pepper to taste

Peel tomatoes and place all ingredients in a blender. If you want it chunky by all means go for it. I like to puree mine. (Tip- I find tomatoes a pain in the ass to peel. If you pop them in boiling water for a minute or two then into cold water right away it’s easier to peel them. Or ya know, buy canned. I’ve never tried that so I don’t know how well it would work. If you drain them you should be okay. )

I love this alone or with bread. (I generally get either jalepeno cheese or olive and pepper bread)
